Christina's Famous Spinochi

3-4 garlic cloves minced or 1 1/2 tsp minced garlic
2 cups mozzarella grated cheese
1 cup grated Parmesan cheese (fresh is best)
1/2 cup mayo
1/4 tsp. pepper
14 oz. can artichoke hearts (mush and break apart but DON'T drain!)
8 oz. cream cheese softened
5 oz. frozen spinach (press water out after dethawing or dry on paper towel.)

Directions:
Mix all ingredients together by hand or on low with a hand mixer. Place in a 9 inch pie pan or 9 inch square casserole pan. Place a cookie sheet underneath and bake at 350 for 30-35 minutes until hot an bubbly. Broil for a few minutes longer if you want a golden top. Serve warm with tortilla chips, vegetables, or baguette bread slices. Enjoy!

Spinache Quiche

"This savory deep-dish pie features herbed feta cheese that melts and mingles in every bite. The cheese is sauteed and mixed with spinach, mushrooms, Cheddar cheese and lots of garlic. This mixture is then combined with milk and eggs, and poured into a prepared crust. A bit more Cheddar cheese is sprinkled over the top, and then the quiche is slipped into the oven until it 's set."
Ingredients:
1/2 cup butter
3 cloves garlic, chopped
1 small onion, chopped
1 (10 ounce) package frozen
chopped spinach, thawed and
drained
1 (4.5 ounce) can mushrooms
, drained
1 (6 ounce) package herb and
garlic feta, crumbled
1 (8 ounce) package shredded
Cheddar cheese
salt and pepper to taste
1 (9 inch) unbaked deep dish
pie crust
4 eggs, beaten
1 cup milk
salt and pepper to taste
Directions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.
3. In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.
4. Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.

Stuffed chicken - put a chicken breast between two sheets of plastic wrap and hammer flat with a mallet or cooking hammer. Then lay chicken out flat, fill with the mix, roll up, wrap with bacon and secure with tooth pics, cook on 350 for 20 to 40 minutes (just keep on checking) and there you have it.

I also like to use it in place of just regular cheese for quesadillas, it works great with the Costco ones.

You can just mix it with pasta and it turns out really flavorful and colorful.

Summer Fresh Salad

Summer Fresh Salad
Salad:
1 large head red leaf lettuce (washed, dried, cut, chilled)
1 (11 oz) can of mandarin oranges (drained)
1 small container of feta cheese
1/4 c craisins
1/2 c sliced strawberries
1/2 c red grapes (halved)
1 can of pears (diced)
1 cooked chicken breast (cubed)

Salad Dressing:
1/2 c Italian salad dressing
1/2 t grated orange peel
1/3 c fresh orange juice
2 T sugar

Top with candied nut of your choice:
1 C SLICED ALMONDS (or nut of your choice)
1/3 C PACKED BROWN SUGAR
1 t GROUND CINNAMON
1 LARGE EGG WHITE (LIGHTLY BEATEN)

Preheat oven to 325 degrees. Combine first 3 ingredients in small bowl. Stir in egg whites. Spread mixture evenly onto a foiled lined baking sheet coated with cooking spray. Bake at 325 degrees for 10 minutes. Stir mixture; bake an additional 13-15 minutes or until crisp. Transfer foil to wire rack. Cool almond mixture. Break almond mixture into small pieces. Store at room temperature in an air tight container for up to 1 week.
