Tomato Basil Pizza

Tomato Basil Pizza
So this is not the best picture but I am lucky we even got one before it was gone! I made this recipe on my new favorite cauliflower pizza crust! See the link on how to do that here: http://itsmmmmmmgood.blogspot.com/2013/03/cauliflower-pizza-crust.html

Ingredients for Topping:
Small Jar 4-6 oz of Pesto Sauce (I love Costco and Trader Joe's but looking for lower fat/calorie ones).
1 cup Mozzarella Cheese
1/2 cup Parmesan Cheese
Handful of fresh  basil chopped
a few extra garlic cloves if you LOVE garlic minced (I actually did not add it in mine there is garlic in the      crust but I bet it would be extra yummy)
2 sliced or cubed med large tomatoes

Directions:
Make your cauliflower crust, take it out of the oven about 3 minutes before it is done. Layer the pesto, sprinkle 1/2 of both cheeses, add fresh basil and extra garlic if you want, top with tomatoes and sprinkle as much or as little cheese as you want.

Change your oven from cook to Broil (raise your oven rack to almost the top) and put it in for about 3 minutes. It will be done when the cheese is melted and the tomatoes are soft and grilled. The crust and cheese at the edge of the pizza may burn a little. Keep an eye on it!

Let it cool a few minutes, slice, and use a spatula to serve. Now it is time to ENJOY!!!

This would also be a delicious pizza on a real pizza crust or even pita bread style pizza. I got the recipe from my friend Mary Lee.

Cauliflower Pizza Crust


I have found a healthy bread substitute that is sooooooo DELICIOUS!!  Avrie HATES cauliflower and LOVED this. She would not even sample it while we were making it.

Cauliflower Pizza Crust Recipe

Yield: 1 pizza crust

 Yes it’s really cauliflower, and a much healthier alternative than regular pizza crust. Nobody will know it's cauliflower though! It is seriously that good!

Ingredients
1 c. cooked, riced cauliflower
2 egg whites
1 c. mozzarella cheese
1 tsp oregano
1 tsp. minced garlic

Toppings: (WHATEVER YOU WANT)
¼ – ½ c. pizza sauce
Parmesan cheese, if desired
pizza toppings

Instructions

Don’t know how to rice cauliflower? Let me teach you the quick easy way.

I purchased a large head of cauliflower, brought it home – washed it thoroughly, and then patted it dry. I then chopped it into small bite size pieces and tossed them into my food processor and processed it until it was the size of rice. Like this: (A BLENDER OR HAND PROCESSOR WILL WORK FINE)


After you've riced it, place it in a microwave safe dish and put it in there for about 7-8 minutes or so.
(YOU CAN BOIL IF NEEDED UNTIL A LITTLE SOFT BUT NOT SQUISHY)

Preheat your oven to 450 degrees F

Grab a pizza pan and spray it with a non-stick spray. By the way, don’t be stingy with the spray. If you don’t use enough, that pizza will be difficult to get off the pan. Trust me on that. You can also use parchment paper if you have it. It works pretty well. I still spray the parchment paper lightly.
(I USED A PIZZA PAN WITH HOLES IN IT AND IT WORKED FINE JUST A BIT HARDER TO CLEAN. I WILL TRY PIZZA STONE NEXT)

In a medium bowl, combine the cauliflower, egg whites, mozzarella, oregano and garlic. (I PUT IT INTO A BIG BALL AND THEN PUT IT IN THE MIDDLE OF THE PAN AND SPREAD IT OUT)

Press evenly in the pan. Push it down into all the corners making sure its stuck to itself pretty well. It will not be a pretty circle, but it won’t matter when you taste it, I promise.

Sprinkle with some parmesan cheese if you want some more flavor.



Bake at 450 degrees for 12-15 minutes. I strongly recommend checking it at about the 12 minute mark and then allow it too cook for remaining time if needed. This crust is not like a typical BREAD crust… it sometimes won’t stay together as well and will require a fork and a spoon, but I also know that once you taste it, you just won’t care. At all. (MINE WAS NOT AS FLUFFY AS THIS BUT YUMMY)



Remove the pan from the oven. Add your sauce, toppings and cheese.

(I MADE A TOMATO BASIL PIZZA- SEE THAT POST, HOWEVER ANY PIZZA TOPPINGS AND SAUCES WILL WORK TRY MY BBQ CHICKEN RECIPE!)

Place under a broiler for about 30-60 seconds, just until the cheese is melted. Watch it carefully or it will burn. (TOMATOES TAKE A BIT LONGER TO GET DONE.)

Fruit Pizza

Fruit Pizza From Real mom Kitchen

This is the time of year that I love to make fruit pizza.  Fresh fruit is in season and you can get it for fantastic prices.  My local grocer had blackberries, strawberries, and blueberries for a great price.  I also decided to add some canned mandarin oranges and pineapple along with some bananas and kiwi.  Think color when choosing your fruit.  This dessert always looks so fresh and impressive.  It would be perfect for your Memorial Day barbecue.  You could even go with a patriotic theme with your fruit similar to this, this, or even this.
A good friend of mine originally shared this recipe with me.  It has a sugar cookie crust that is soft and tender but not too sweet.  You can also make regular sugar cookies (even Betty Crockers sugar cookie mix will do) and make mini fruit pizzas or even have a mini fruit pizza bar.  You have the cookies spread with the topping and then have assorted fruits that your guests can top their own pizza with.  These really are fun and so delicious.

Fruit Pizza
Crust:  (or you can make sugar cookies and have small "pizzas.")
  • 3/4 cup sugar
  • 1/2 cup shortening
  • 1 large egg
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp baking soda
  • 2 3/4 cup flour
  • 1/2 cup milk
Glaze: (optional)
  • 1/2 cup sugar
  • dash of salt
  • 2 Tbsp. cornstarch
  • 1/2 cup orange juice
  • 1/4 cup water
Topping:
  • 1 (8 oz.) package cream cheese
  • 1 (8 oz. ) container Cool Whip
  • 1 tsp. vanilla
  • 1/2 cup powdered sugar
Also need assorted fruits to top the pizza.  Be creative – strawberries, grapes, kiwi, mandarin oranges, raspberries, blackberries, pineapple, peaches, apples, blueberries
For the crust: Blend sugar, shortening, and vanilla well. Add egg and beat until smooth.  Add dry ingredients alternately with the milk until dough is formed.  Chill dough for 1 hour.  Spray an 13-14 inch pizza pan with cooking spray.  Press dough into pizza pan.  Use a round glass to help even and flatten out the dough.  Bake at 350 degress for 10-12 minutes or until the edges get light golden in color.  Allow crust to cool.
For the glaze: Prepare this while the crust cools.  Mix ingredients in a sauce pan and cook for about 4 minutes, just until it begins to thicken.  Allow to cool.
For the topping: In a large bowl, blend ingredients with a mixer until nice and smooth.
To assemble the pizza: Spread the topping onto the cooled crust, leaving 1/2-1 inch of the edge of the crust uncovered.  Arrange fruit over pizza in desired pattern.  This is the fun part.  If using the glaze: take a pastry brush and gently brush glaze over fruit.  This helps to preserve the fruit. Make sure none of it gets on the exposed crust or it will make the crust soggy.  Depending on the fruit you use, you can do this the night before.  I do know the bananas and apples don’t work to make it the night before.
Variations: Instead of the glaze, drizzle fruit with melted chocolate.
Instead of fruit topping you can use canned pie filling.

3 Cheese Garden Pizza

3 Cheese Garden Pizza- The Pampered Chef
Pizza crust: I have a super quick 8 minute homemade crust on this blog. Or use refrigerated one.
1 TB vegetable or olive oil
2 garlic cloves pressed
1 cup (4 oz) shredded cheddar cheese
1 cup shredded mozzarella cheese
1/4 cup (1 oz) grated fresh Parmesan cheese
1 tsp Italian seasoning
1 small onion sliced into rings
2 or 3 tomatoes slices or cubed
1 med zucchini sliced thin
1 cup sliced mushrooms (optional)
Preheat oven to 400 degrees. Roll out pizza on pizza stone or pan coated lightly with corn meal to prevent sticking. Mix pressed garlic with oil and brush evenly over dough with a kitchen brush. Bake REFRIGERATED crust only for 5-7 minutes. Remove and place on cooling rack.
LAYER:
Half of all 3 cheeses
Italian seasoning
1/2 of onion
all of zucchini
1/2 of tomatoes
(mushrooms)
Then on top:
rest of onion
rest of tomatoes
and top with remaining cheese!
Bake 15-18 minutes more or until golden brown for refrigerated crust
or for Homemade crust bake 8-10 minutes until golden brown.
YUMMY!
Christina's Tip: This recipe did not sound that good to me at first. However once I smelt it cooking and tasted it I have been hooked ever sense! It is really really good and easy.
For the girls I either make a few slices with minimum onion/ tomatoes etc. Or just make them a cheese/ peperoni pizza on the side so we can have our own.

California Pizza Kitchen BBQ Chicken Pizza


This is quick and super yummy!

What you need:
Pizza Dough: I have a great quick recipe on this blog
1 lb Chicken
1 TB olive oil
2 TB Bulls-eye Original BBQ sauce (my favorite)
Cornmeal (to put on pan or pizza stone before dough)
2 cups shredded mozzarella cheese, cheddar and Parmesan. Or buy a pre made pizza mix.
1/4th small red onion
1/2 a red and green pepper (2 colors are nice for look but not necessary. 1 full pepper is fine)
2 TB chopped fresh cilantro (can use dry seasonings but make sure you cook them)

Preheat your oven 500 degrees and if using a pizza stone place it in the oven to heat up.

In large frying pan with olive oil or on a George Foreman cook the chicken just until cooked. Do not overcook. Cut cooked chicken into pieces and coat with 2 TB of BBQ sauce. Set aside in the refrigerator (for best flavor) Or put right on top of the prepared pizza to save time.

Prepare Pizza dough and then spread 1/4th cup BBQ sauce evenly over the surface of the dough leaving a small crust. Sprinkle half of the cheese over the sauce. Next add 1/2 of the onion, all the peppers and chicken. Then top off with the rest of the onion, and cheese.

Bake 400 degrees for 8-10 minutes until the pizza is hot and bubbly. Once cooked sprinkle cilantro on top, slice and serve.

WARNING: THIS IS SUPER YUMMY YOU MAY NEED TO MAKE 1 pizza per person! Ü

Pizza Dough


Easy & QUICK Pizza Dough

1 TB yeast
1/4 tsp sugar
3/4 cup hot water
1 3/4 cup flour
1/2 tsp salt

Heat oven to 500 degrees

Dissolve the yeast in hot water, add sugar and let rest for 8 minutes. (It will get fluffy).

In another bowl combine salt and flour. Add yeast mixture.

Mix in mixer 5 minutes with dough hook or knead for 5-10 min.

Roll out on pizza pan, add desired toppings and Cook 8-10 minutes!
