1 1/2 lb. flank steak, trimmed of fat and cut into 1/4 inch strips
1 cup broccoli flourets, cut into bite-sized pieces
2 large stalks celery, cut into 1/4 inch pieces
2 large carrots peeled and cut into 1/4 inch slices
1 small red bell pepper, cored, seeded and cut into 1/4 inch strips
6 T. Soy sauce
5 T. Vegetable oil
1 tsp. Ground ginger
1 tsp. Salt
1/4 tsp. cayenne pepper
1- In a bowl, combine steak and soy sauce. Heat 4 tablespoons of oil in heavy 12 inch skillet over moderate heat for 1 minute. Add beef and cook, uncovered, stirring often for 5 minutes until no pink remains. Using a slotted spoon, remove steak to a warm platter and set aside.
2- Add remaining tablespoon of oil to skillet. Add carrots and broccoli and cook, stirring often for 2 additional minutes or until the vegetables are crisp-tender.
3- Reduce the heat to moderately low and return the steak and any accumulated juices to the skillet and simmer for 2 minutes. Serve with 1/2 cup or rice per serving. This recipe serves 4.
Calories per serving: Approximately 515 with 1/2 cup rice and 415 without.

Autumn Vegetable Stew
1 small butternut squash about 1 1/2 pound (750 g)
4 red boiling potatoes, about 2 lb (500 g)
1 green or red bell pepper
2 tablespoons olive oil
1 large yellow onion thinly sliced
2 cloves garlic, minced
2 cups roasted vegetable stock or low sodium chicken broth
1 1/2 cups peeled seeded and chopped tomatoes
1 1/2 cups corn kernels
1 teaspoon dried sage or 1 tablespoon chopped fresh sage
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Using a vegetable peeler, peel the squash. Halve it length-wise, scrape out the seeds and then cut into 1 inch cubes. Cut the unpeeled potatoes into pieces about the same size. Halve the pepper through the stem, end and remove the stem, ribs and seeds. Cut into 1 inch squares. Set the vegetables aside.
In a large saucepan or a dutch oven over medium-low heat, warm the oil. When hot, add the onion and garlic and cook, stirring occasionally, until the onion has wilted, about 5 minutes. Add the squash, potatoes, stock or broth, tomatoes, corn, sage, salt and pepper and stir to combine. Bring to a boil over medium high heat, reduce the heat to low, cover and simmer for 10 minutes to cook the potatoes and squash partially.
Stir in the bell pepper, raise the heat to medium and return to a boil. Cover, reduce the heat to low and simmer until the vegetables are tender but not mushy when pierced with a knife, 10-15 minutes longer. Ladle into warmed shallow bowls and serve at once.

Pumpkin Bread
Cooking time: 1 hour / Preheat oven to 350
Mix sugar, oil, and eggs together. Add pumpkin. Add dry ingredients, then add water stirring just until mixed and pour into 3 bread pans.
Christina's tip: Add chocolate chips to make it more yummy!

1 tablespoon butter or margarine
2 cans Swanson Chicken broth - 2 cups water with 2 bullion cubes
3 medium carrots sliced very thin
3 medium potatoes, peeled and cubed
2 cooked chicken breasts, cubed
2 tablespoons dried parsley
Salt and pepper to taste
1/4 cup all- purpose flour
1 cup milk
1 8oz pkg. Philadelphia cream cheese, cubed
In a large saucepan saute the onion in butter. Add broth, carrots and potatoes. Bring to a boil. Reduce heat, cover and simmer for 15 minutes or until vegetables are tender. Add chicken, parsley, salt and pepper, heat through. Here is where I mixed as well as possible the cubed cream cheese with the milk to get it as smooth as possible. Might still have a few small lumps. I also used whatever small amount of the water that was left after the carrots were steamed. Combine with flour and add to the vegetable mixture. Bring to a boil; cook and stir until thickened. Reduce heat, cook and stir until all cheese is melted.

Grandma Larson's Pie Crust
2 cups flour
1 tsp salt
2/3 c Crisco
6-7 tbs. cold water
Cut flour, salt and Crisco together with two knives. Slowly cut (add) in the cold water. When right consistency, place on floured surface, forming into ball with your hands, then roll out the rolling pin.

Taco Soup
Brown 1 lb. hamburger with 1 chopped onion. Stir in 1 pkg Lawry's Taco seasoning.
Then add in a pot:
1 can kidney beans (with the juice)
1 can kernel corn (with the juice)
1 can tomatoes
1 8 oz. can tomato sauce
1 can black beans
2 cups cooked pinto beans
Serve hot with shredded cheese, sour cream, and Fritos.

Green Onion Vinaigrette
1 c. olive oil
¾ c. seasoned rice vinegar
1 tsp. salt
1 ½ tsp. black pepper
½ c. sugar
4-6 green onions, coarsely chopped
Combine all ingredients in blender and puree until smooth. Store excess in fridge up to three weeks. Olive oil will solidify but dressing can be warmed in the microwave to soften before pouring over salad.
Combine any mixture of salad fixings and top with almonds and dressing!

Pasta and Bean Skillet
1 cup salsa
2/3 cup uncooked elbow macaroni (wheat works great)
3/4 cup water
1 can white beans
1 can (15-16oz.) Kidney beans, rinsed and drained (can add corn and drained black beans if desired)
1 can (8 oz) tomato sauce
1/2 cup shredded cheddar cheese
Heat all ingredients except cheese to boiling in non-stick skillet, reduce heat. Cover and simmer about 15 minutes, stirring frequently, until macaroni is tender.
Christina's tips:
Add in 1/2 cup of diced tomatoes drained
1/2 onion sliced or 3-4 green onions
Use whatever type of noodles you have.

2 or 3 cans of crescent rolls
dash of salt, pepper, and onion powder or minced onion.
Mix the cream cheese, butter, salt, pepper, and onion powder together. Add the shredded chicken and mix thoroughly. Place 1/2 cup of mix on 1 crescent roll. Don't tear the rolls apart. Roll up and seal on the ends. Dip them in the melted butter, then roll them in the dressing crumbs. Place in the baking dish and bake at 375 degrees for 20 minutes of until golden brown. Serve with chicken gravy.

4 spring onions (scallions)
Put the rice into a saucepan and pour over the water and 1 teaspoon of salt. Bring the water to a boil, reduce the heat to low and cover the pot. Simmer for 15- 20 minutes or until the water has been absorbed and the rice is cooked and tender. Remove from heat.
Melt the Butter in a large frying-pan. Add the eggs and cook for 2-3 minutes or until they are set on the underside. Stir the eggs and cook for 2-3 minutes or more until they are just set. Remove from the heat and transfer the eggs into a bowl, breaking them up with a fork. Set aside.
Add the oil to the frying pan and heat over moderately high heat. Add the cooked rice, beans, ham, and pepper, and cook for 2 minutes stirring constantly. Reduce the heat to moderately low and add the spring onions and eggs. Cook for 2 minutes stirring constantly, or until the mixture is very hot.
Transfer the mixture to a warmed serving dish and serve at once. Enjoy!

Christina's Famous Spinochi

2 cups mozzarella grated cheese
1 cup grated Parmesan cheese (fresh is best)
1/2 cup mayo
1/4 tsp. pepper
14 oz. can artichoke hearts (mush and break apart but DON'T drain!)
8 oz. cream cheese softened
5 oz. frozen spinach (press water out after dethawing or dry on paper towel.)
Directions:
Mix all ingredients together by hand or on low with a hand mixer. Place in a 9 inch pie pan or 9 inch square casserole pan. Place a cookie sheet underneath and bake at 350 for 30-35 minutes until hot an bubbly. Broil for a few minutes longer if you want a golden top. Serve warm with tortilla chips, vegetables, or baguette bread slices. Enjoy!
